Here in Kentucky it’s a Big Blue Nation
This will seem ironic coming from someone who’s never attended a single University of Kentucky sports event, but I’ve been overcome with blue fever. I only root for underdogs and the idea of UK’s football team playing and beating LSU on national television was redemption for a team widely neglected by their school. Until now.
As my 86-year-old father, a serious WVU fan, said last Saturday, "I have seen it all."
To celebrate their recent victories we came up with a big, linebacker-size cupcake of blue velvet cake slathered with a helmet of cream cheese icing stamped with a blue paw print. It makes your tongue turn blue. Two bites and you’re a Carolina Game Cock fan but three bites in you’ve got true blue Kentucky to last a game with triple overtime.
The following is a release we sent out about it. I only hope their streak continues and we can keep making the BIG BLUE VELVET CUPCAKES well into the bowl season.

Announcing the debut of our signature treat THE BIG BLUE VELVET CUPCAKE, an oversized chocolate buttermilk cupcake with snowy white cream cheese icing. One bite and everyone will know you’re a Big Blue Fan (for at least 24 hours, or as long as the morning-after hangover, whichever comes first). The cakes are dark blue with a light texture and chocolate-y flavor and do leave a temporary blue tinge to your tongue – though it should be noted this only makes your teeth look whiter and brighter.
If you love red velvet cake you’ll love BIG BLUE VELVET CUPCAKES.
We use pure cane sugar, local Weisenberger Mills flour, eggs, real butter, cream cheese, pure vanilla, oh, and FDA-approved blue food coloring. In other words, they aren’t our usual all-natural bakery items buy boy, are they good. Built like a linebacker, each cake weighs in at 5 ounces frosted and costs $2.50 each each, or $15. a half dozen. . (Please don’t ask us to make them smaller, we don’t want to jinx the season).
So place your orders early for your next tail gait or home theatre party. The season will only get sweeter and bluer with The BIG BLUE VELVET CUPCAKE.
The store also sells box lunches, sandwiches, salads, and desserts and has a catering menu for larger groups.
The cupcake was created by farmer/baker Susie Quick who founded Honest Farm, a nonprofit farm and local food store promoting local food from Kentucky farmers.
The green market, which also features a bakery and deli of prepared foods, provides a year-round venue for Kentucky farmers and their products. “It’s a place where you can see, smell, touch and taste Kentucky so we felt the BIG BLUE VELVET CUPCAKES would be a nice fit,” says Quick, a cookbook author and former food writer who settled in the Lexington area four years ago after moving here from New York City.
“I will also have Big Blue Rice Crispie Treats, a jumbo sugar cookie, and am working on a brownie but I hope in the process to convert folks to shopping local. In fact, we sell half gallons of delicious all natural, local whole milk and chocolate whole milk that goes fabulously with the cupcakes from the Schrock family of Russelville, KY,” says Quick.
