Honest Farm Inside out Bison Cheeseburgers
Ground bison is a flavorful lower-fat alternative to beef and although you might think it would have a wild flavor, it’s actually not at all gamy and makes the juiciest burgers. We’re lucky to have the Kentucky Bison Company right here in the bluegrass state so the supply is plentiful. If you can’t find bison though you can substitute ground sirloin for this recipe instead.

Ingredients
1 1/2 pounds ground bison
1 cup grated Swiss or cheddar cheese
Kosher salt and freshly ground pepper
4 thick slices red onion
4 poppyseed or sesame rolls, halvedAccessories
Sliced beefsteak tomato
kosher dill pickle slices
coarse-grain mustard
mayonnaise
Leaf lettuce
Instructions
1. Form ground bison into eight 4-inch patties. Arrange 4 patties on a baking sheet. Top each with 1/4 cup cheese; place remaining patties on top. Pinch edges together, shaping each into a single burger.
2. Lightly coat a clean grill with cooking spray; preheat to medium. Sprinkle salt and pepper on both sides of burgers; grill covered, turning once with a spatula, 5 to 6 minutes total for medium-rare. While burgers cook, grill onion slices, turning once, until tender, about 4 minutes. Grill rolls until toasted, about 3 minutes. Serve burgers on rolls topped with grilled onions and add-ons.
